Scents, flavours, colours, produce, the light on the peninsula...our cuisine is inspired from words and images. It is the task of our Chef, to recreate this inspiration in his cuisine and on the palate with his customary delicacy and refinement.
‘There must be refinement, but a refinement that comes from the utmost simplicity. The produce here, both from the land and the sea, is of exceptionally high quality. The trick is to preserve its authenticity, its essence, what makes it special. Then the real challenge is to combine different ingredients, to spark off chance encounters, to reveal their true colours and depths, in a subtle interplay of flavours’.
